It was the dead of winter, a Tuesday around 2 a.m., when I pulled into the Dusty Fork on Route 23 outside Melvern, Kansas. The parking lot had one truck, the windows were steamed, and the sign said OPEN. The waitress poured coffee without asking and the only other customer sat in the corner booth, not eating, not reading, just watching the door. Over the next three hours, the truck never left, the cook never came out, and the waitress started refilling a cup that was already full.
