Summary

 To make shabu-shabu, you cook vegetables and tofu in a hotpot filled with flavored broth, and dip thinly sliced pieces of meat into the broth. The meat and vegetables are eaten with ponzu or sesame sauce. しゃぶしゃぶは、薄くスライスした肉を野菜や豆腐の入っただし汁にくぐらせた後、ポン酢やごまだれにつけて食べる鍋料理。
日本では寿司や天ぷら、すき焼きなどと並ぶごちそうのひとつです。
ルーツはモンゴルの騎馬民族の羊肉料理ですが、日本のしゃぶしゃぶは1952年に大阪の肉料理店であるスエヒロが考案しました。
肉をだし汁に通す様子が、店員がたらいの中でおしぼりを洗う姿に似ていたことから「しゃぶしゃぶ」と名づけられたそうです。
使用される肉は基本的に牛肉ですが、1990年代に豚肉や鶏肉、魚など、国内各地の食材を使ったしゃぶしゃぶが登場しました。
